Tomato basil tarte- Parmesan mousse, tomatoes, Sebastopol micro basil

First Course:
Prosciutto and Melon Soup- Chilled melon gazpacho, crispy prosciutto, micro sunflower sprouts,
toasted pepitas

Second Course:
Smoked Sockeye Salmon- Crispy corn cake, crème fraiche, pickled Persian cucumbers, chives,
smoked trout roe, chives

Third Course:
Pan Seared Hokkaido Scallops- sunchoke puree, sturgeon caviar, K&J stone fruit salsa,
toasted pistachios, microgreens

Fourth Course:
