Eight North is a wine-focused bar and restaurant in the heart of downtown Calistoga, where guests can taste wines or enjoy a full meal in a warm, contemporary setting. The menu centers on a seasonal wood-fired grill with bold, ingredient-driven dishes and peak-season produce designed to pair beautifully with wine.
Wine tastings feature producers from across Calistoga in curated flights, by-the-glass pours, and seasonal pairings, with a special focus on smaller local producers without a tasting room. Immersive video screens in the dining area showcase the vineyards and winemaking process throughout the year, bringing the region’s landscape and craft to life. Guests can also enjoy distinctive “evolution” tastings comparing verjus, juice, and finished wine from the same vineyard, along with local products such as locally roasted coffee, nearby craft beers, and regional spirits.
